  • Nose : very open, delicate, currant, violet and a bit of fennel
  • Mouth : nice volume, velvety tannins, fruity ending (currant and blackberry)

Various plots for a total of 3 hectares, chalky-clay land with more than 50% of clay

Exposure to south only 100%
Malbec grape variety more than 35 year old vines

 

ITS MAKING OF

Hand-made leaf thin out, green harvest (cluster of grapes selection) hand made harvesting, long vatting time (38 to 45 days)

punching off the cap,

run off in new oak barrels (period of maturing approximately 18 to 24 months)

 

 

 

 

 

ROSSIGNOL 
AOC CAHORS

TASTING COMMENTARY

  • Sight : dark purple, brilliant
  • Nose :powerful, violet and then fenel
  • Mouth : oily, steady and powerful tannins and red fruits, long
  • To be aged up to 15 years
  • To be served with game or cheese courses after decanting.

ITS SOIL

1.80 ha of chalky land on the Limestone plateau South, southeast exposure

 

MAKING OF

  • Grape variety: 100 % malbec
  • hand -made Leaf thinned out
  • Maximum yield: 25 to 300 hl per hectare

 

VINIFICATION

  • Traditional long vatting with thermoregulation (28 to 35 days) yeast free
  • Aged in vat for at least 18 to 24 months to be aged up to 15 years

 

 

 

LE CHENE DU PRINCE
AOC CAHORS

TASTING COMMENTARY

  • Nose : powerful, spicy
    Mouth : vivid attack, steady but not aggressive tannins, red fruits
  • To be aged up to 10 years
  • To be served with game or cheese courses after decanting.

 

GRAPE VARIETY

  • malbec 100%
  • Limestone plateau, Chalky û clay land
    South, southeast and southwest exposure
  • 20 year of average age,  density : 5000 vine-stock per hectare

MAKING OF

  • Leaf thinned out

  • Maximum free-run yield: 45 to 50 hl per hectare

VINIFICATION 

  • Traditional with thermoregulation of 28 to 35 days selected
    yeast free
  • One year oak barrel ageing,to be aged up to 10 years
